Firstly, what is an éclair?
Originally, an eclair was an oblong pastry made with choux dough filled with a vanilla cream and topped with chocolate icing. Of course, over the years this has changed and evolved based on what’s on-trend. Now, an éclair has moulded and morphed in shapes, sizes, fillings, and recipes.
What’s interesting is that the eclair originated during the nineteenth century in France where it was called “pain à la duchesse” until 1850. Eclair means “lightening” in French and many people believe that eclairs got their name from the glistening sparkles from the frosting that resembles a lightning bolt. Nature into food, how good is that?
Here at Ma Cherie we couldn’t imagine our wholesale French kitchen without eclairs . We make these wholesale pastries for the mum on the run, the 3pm office required sugar rush, the ‘WOW’ of a child’s face looking at the café cabinet…and really, anyone who has a sweet tooth.
