The New and Improved Dark Chocolate & Passion Fruit Gateaux

We’re delighted to inform you that we’ve redesigned our Dark Chocolate and Passionfruit Gateaux.  Being our best seller, we haven’t made any changes to our favourite recipe! Our Dark Chocolate and Passionfruit Gateaux still has it’s wonderful almond daquoise, passionfruit jelly and delicious dark chocolate mousse. We’ve just changed the look. 

In light of our exciting new release, we thought it would be fun to interview the chef himself. We asked head chef, the creator, Guillaume a few questions about the famous Dark Chocolate and Passionfruit Gateaux.  

  

How long ago was the original Dark Chocolate & Passionfruit Gateaux launched? 

We launched this product 8 years ago and due to its popularity, it’s still being produced today.  

 Did you try any other flavour combinations before settling on this one?  

We had different flavours combination but the balance between the tartness of the passionfruit and the smoothness/bitterness of the dark chocolate was simply perfect.  

 Where did you get the inspiration for these gateaux from? 

I was inspired At Fauchon in Paris back to 1998, we were producing entremets/gateaux having the combination between tropical fruits and chocolate that was standing.  

 Describe the Dark Chocolate & Passionfruit Gateaux.  

It’s a delicious daquoise (almond sponge cake) layered with passion fruit jelly and dark chocolate mousse. Covered in decadent dark chocolate, and finished with hand piped Chantilly cream, and passion fruit glaze. 


All of Ma Cherie’s desserts are handmade with quality ingredients. Each Gateaux also continues to be 130g per individual dessert.
