At Ma Cherie, our macarons are made from a very simple list of ingredients. We follow a traditional French recipe to ensure they look and taste authentic. Our trained team of pastry chefs combine eggwhite, caster sugar and almond meal – nothing else. We don’t use any additives or preservatives in our macarons. The trick to get macarons perfect every time is all in the experience, you need to either have beginners’ luck, or have the eye and instinct to get the right texture. This can make or break your macarons… and trust us they can quickly go wrong.
In the Ma Cherie kitchen, we’ve been making macaron shells every week for the last 10 years. Due to the humidity and volatile weather in Auckland, the texture of the mixture changes every single time!
